Spicy Sausage “Goulash”

Ingredients

  • 12 Oz Orecchiette Pasta

  • 3 Tbsp Olive Oil

  • 10 Oz Spicy Ground Sausage (if not ground then remove Casings)

  • 3 Green Onions (thinly sliced, divided)

  • 4 Garlic Clove (crushed)

  • 8 Oz Baby Bell Mushrooms (sliced)

  • 16 Oz Cherry Tomatoes

  • ½ Cup Chicken Broth (stock can be used in a pinch)

  • ½ Cup Parmesan Cheese

Directions

  • Bring a large pot of water to a boil, and cook the pasta as directed. While it is cooking, we will be making of the recipe. If pasta get done before we are done, just drain the pasta and add a little bit of olive oil to keep it from sticking.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the sausage and start breaking it up with wooden spatula until the start to brown, about three minutes.
  • Add in your green onions (keeping enough to sprinkle on top aside) and cook until soft, about another three minutes.
  • Add in the mushrooms, garlic, and a little bit of salt and pepper, stirring occasionally until the mushrooms start to brown, yet another three minutes.
  • Finally add in your tomatoes and continue to cook for how long, that is right another three minutes. I like working in three with this recipe.
  • Pour in your chicken broth and reduce heat to a nice low and let simmer for about a minute (you thought it was going to be three, didn’t you?)
  • When the pasta is done simply stir it into the sausage mixture with the cheese and you are ready to eat.
