Ingredients

  • 2 Pounds Cooked and Shredded Chicken Breast

  • 1 Tbsp Coconut Oil or Olive Oil

  • 2 Bell Peppers (seeded and sliced)

  • 1 Large Onion (chopped)

  • 4 Oz Hot & Sweet Jalapenos

  • 8 oz Cream Cheese

  • 1 Tbsp Taco Seasoning

  • 2 cups Shredded Cheddar Cheese

  • 2 Avocados

Directions

  • Preheat oven to 375 degrees.
  • Prepare a 9×13 inch casserole dish with cooking spray.
  • In a large skillet over medium heat add the oil and swirl to coat.
  • Add the onions and peppers to the skillet, cooking over medium-high heat and stirring occasionally until softened. Remove from heat.
  • To the skillet add the chicken, cream cheese, taco seasoning, and one cup of shredded cheese.
  • Transfer to casserole dish, and top with remaining cheese.
  • Bake for 25-30 minutes or until the cheese is melted and bubbly.
  • Serve topped with sliced avocado.
