Chicken Salad Melt

2 cups Chicken Breast (cooked and shredded)
¼ cup Greek Yogurt
¼ cup Mayonnaise
2 tsp Fresh Dill (chopped)
½ Medium Red Onion
¼ tsp Salt
¼ tsp Pepper
3 Green Onions (thinly sliced)
3 Celery Stalks (thinly sliced)
4 Ciabatta Rolls
4 Slices of Your Favorite Cheese (I used cheddar)
6 Lettuce Leaves
Directions
- Preheat broiler to high
- Combine Chicken, yogurt, mayonnaise, dill, salt, pepper, onion, celery, and green onions into a medium bowl and mix well.
- Place 1/3 cup of chicken mixture on bottom half of each roll, and top with cheese.
- Broil for about 1 minute or until cheese is melted.
- Top sandwiches evenly with lettuce, and other half of roll.
