Spicy Hamburger Casserole

Ingredients

  • 1 ½ Pound Ground Beef

  • 1 Orange Pepper

  • ½ Large Yellow Onion

  • 15 Oz Tomato Sauce

  • 1 Can Diced Tomatoes

  • 1 4 Oz Can Diced Green Chilis

  • 2 Cups Corn (frozen or canned)

  • 2 Cups Dried Macaroni

  • 3 Cups Shredded Cheese Blend

  • 1 Tbsp Chili Powder

  • 2 Tsp Garlic Powder

  • 2 Tsp Cayenne Pepper

  • 1 Tsp Salt

  • 1 Tsp Pepper

Directions

  • Cook macaroni according to directions and set aside.
  • While macaroni is cooking brown your ground beef, drain grease from it and set aside.
  • Sauté the onions and pepper until tender. If needs be, add a little olive oil.
  • Stir in the tomatoes, tomato sauce, green chilis, and the spices. Bring to a boil then reduce heat to low and simmer for about 10 minutes.
  • Stir in the corn and continue to simmer for an additional 5 minutes.
  • Add the pasta and beef back into the pan and carefully stir until well incorporated.
  • Pour into a 9×13 casserole dish and top with the shredded cheese blend.
  • Bake at 350 degrees for about 30 minutes or until the cheese is brown and bubbly.
