1 Pound Ground Beef
1 Cup Elbow Macaroni
1 Can Black Beans (rinsed and drained)
1 Can Fire Roasted Corn (drained)
1 Can Fire Roasted Tomatoes with Jalapenos
1 Pack Taco Seasoning
8 Oz Shredded Mexican Cheese Blend
Directions
- Start cooking macaroni according to package directions.
- Meanwhile, in large skillet brown you ground beef over a medium-high heat and drain excess grease.
- Combine the beans, corn, tomatoes, and seasoning stirring to combine and let simmer on medium-low heat for about 5 minutes.
- When macaroni is done carefully stir into the beef mixture and continue to cook until it has been warmed thru.
- Stir in the cheese and continue to stir until cheese has melted.
- Remove from heat and let stand for about 5 minutes.
