Ingredients

  • 1 Pound Ground Beef

  • 1 Cup Elbow Macaroni

  • 1 Can Black Beans (rinsed and drained)

  • 1 Can Fire Roasted Corn (drained)

  • 1 Can Fire Roasted Tomatoes with Jalapenos

  • 1 Pack Taco Seasoning

  • 8 Oz Shredded Mexican Cheese Blend

Directions

  • Start cooking macaroni according to package directions.
  • Meanwhile, in large skillet brown you ground beef over a medium-high heat and drain excess grease.
  • Combine the beans, corn, tomatoes, and seasoning stirring to combine and let simmer on medium-low heat for about 5 minutes.
  • When macaroni is done carefully stir into the beef mixture and continue to cook until it has been warmed thru.
  • Stir in the cheese and continue to stir until cheese has melted.
  • Remove from heat and let stand for about 5 minutes.
