They say that breakfast is the most important meal of the day. I do not know if that is true, but it is one of my favorites. The countless things you can make are simply astounding to meal. Take this cornbread breakfast casserole, you simply add a few ingredients to your classic cornbread casserole and like magic you have a wonderful for breakfast or even brunch. Just make sure you have a really big appetite, family, or some friends to help you with this guy, cause cornbread breakfast casserole is very filling.

Preparing to Prepare

When I come up with some of my recipes I will tell everyone to precook some of your ingredients first. I do that so you can get somethings out of the way and have smooth sailing throughout the rest of the recipe. In the case of this breakfast casserole I recommend cooking up your bacon and sausage first. You can even cook these ahead if that helps you manage/save time better. I will sometime just cook the meats up with dinner the previous night so that all I have to do in the morning is mix everything together bake the casserole and enjoy my coffee.

Now the best part about this breakfast casserole is that you can interchange so many ingredients. You can make this vegetarian, you can make it vegan, or even swap out the meats to those that you prefer. When it comes to teaming up your cornbread breakfast casserole with other sides my favorites are breakfast potatoes or even grits. Both are excellent dishes to help pull this meal together.

A filling addition to your breakfast table.

Ingredients

  • 1 Box of Cornbread Mix (your favorite)

  • 1 Cup Sour Cream

  • 1 Can of Corn (drained)

  • 1 Can Cream Corn

  • ½ Cup Unsalted Butter

  • 8 Strips of Bacon (cooked & chopped)

  • ½ Pound Ground Sausage (cooked)

  • ½ Cup Shredded Cheddar Cheese

Directions

  • Preheat oven to 375 degrees.
  • In a large mixing bowl combine bread mix, sour cream, cream corn, corn, and butter.
  • Fold in your sausage and bacon pieces.
  • Pour your cornbread mixture into the baking dish, and cover with cheese.
  • Bake for about 30 minutes or until cheese is nice and browned.
