What can I say, S’mores are just one of the greatest things invented. If I could find the person responsible for S’mores I would nominate them for sainthood. But enough about how much I love S’mores. So one day I was thinking how can I get my S’more kick with lighting a fire, and I thought why not make a cake out it! Thus the seed was planted and a creation born.

A Note on Ingredients

When I first went about trying to figure out how would I turn a S’more into a cake I had a little trouble. How do I incorporate the graham cracker? Do I go with cake or come up with a cream-like middle? And do not get me started on the level of difficulty that a marshmallow can produce. But I thought of some of my other favorite desserts and used them as inspiration. Form a graham cracker crust like a cheesecake, go with a traditional style cake for the middle, and there is nothing that cool whip does not go with for the icing. With that out of the way I just had to bring the top together, and what better way than adding more graham crackers (I used cereal, but you can also crumble up graham crackers), chocolate chunks, and more marshmallows. Break out your insulin cause you might need it after this one.

Using chocolate chunks, mini marshmallows, and golden grahams makes for a great topping.

Ingredients

  • Crust
  • 2 Sleeves Graham Crackers (18 whole crackers)

  • ½ Butter (melted)

  • Cake Mix
  • 1 ½ Cup Flour

  • 1 ½ Cup Sugar

  • ½ Cup Cocoa Powder

  • 1 Tsp Baking Powder

  • ½ Tsp Baking Soda

  • ½ Tsp Salt

  • 1 Cup Milk

  • 3 Large Eggs

  • ½ Cup Vegetable Oil

  • 2 Tsp Vanilla Extract

  • Frosting
  • 1 Container Cool Whip

  • 1 Container Marshmallow Fluff

  • Toppings
  • Mini Marshmallows

  • Chocolate Chips/Chunks

  • Golden Graham Cereal or Crumbled Graham Crackers

Directions

  • Crust
  • Preheat oven to 350 degrees Fahrenheit.
  • Place graham cracker into a food processor and blend until fine.
  • Add in melted butter and continue to blend until fully incorporated
  • Transfer into a 9×13-inch baking dish pressing it into a crust all along the bottom.
  • Cake
  • In a large bowl whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a small bowl whisk together milk, eggs, oil, and vanilla.
  • Slowly stir together the egg mixture into the flour mixture until well combined.
  • Pour batter over the graham cracker crust and bake for about 35 minutes or until a knife/toothpick comes out cleanly.
  • Remove from oven and let cool.
  • Frosting
  • Blend together both marshmallow fluff and cool whip until smooth.
  • Pour over fully cooled cake and spread to evenly cover the cake.
  • Garnish your cake with golden grahams, marshmallows and chocolate chips.
