About This Recipe
I love learning about new foods and recipes so when one of my former work colleagues told me about this dish I had to try it. Chilaquiles is a traditional Mexican style breakfast dish that consists of corn tortillas topped with a salsa type mixture and served with eggs, guacamole, or even refried beans. But she also told me that with any Mexican style dish chilaquiles is served many different ways depending on the family and region. I did a little research and decided to make my own sauce using diced tomatoes, chipotle peppers, onions and garlic, I hope that you enjoy it.
Variations On The Recipe
I made this recipe without the use of any meats. You can follow along with that or you can add some type of meat to it. The top things I would recommend would be either carnitas or even chorizo. Other options can be shredded beef or chicken, seasoned ground beef, or even goat (though you might have to go to a specialty store for that one). When it comes to your tortillas you would traditionally cut corn tortillas and bake them. However if you do not have any you use tortilla chips just make sure to allow for extra time for them to soak up some of the sauce to get soft. Chipotle Chilaquiles

8 6-inch Tortillas (cut into triangles)
1 Can Diced Fire Roasted Tomatoes
½ Medium White Onion (chopped)
1 Can Chipotle Peppers in Adobo Sauce (2 Tbsp sauce reserved)
1 Tbsp Lime Juice
2 Garlic Cloves (peeled)
2 Tbsp Avocado Oil
4 Large Eggs
1 Avocado (sliced)
½ Cup Crumbled Cotija Cheese
3 Tbsp Fresh Cilantro (chopped)
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Coat a large baking sheet with cooking spray and arrange as many tortillas as you can on it.
- Spray some cooking spray on your tortillas and sprinkle on some salt.
- Bake for about 15 minutes or until tortillas become crispy.
- Repeat previous steps until all tortillas are baked.
- Meanwhile, combine your tomatoes, onion, chipotles, adobo sauce, garlic, lime juice, and ½ tsp salt in a blender and puree until smooth.
- Pour mixture into a deep skillet and simmer over medium heat for about 5 minutes, stirring occasionally.
- In another large skillet cook your eggs sunny side up using the avocado oil.
- Add the tortillas to the sauce and toss to coat.
- Top with eggs, avocado, cheese, and cilantro.
