About This Recipe
What is a Kolache? Well a Kolache is a sweet pastry that traditionally holds a fruit mixture. Think of them kind of like little fruit pizzas. They came to America from Central Europe where we put our own little spin on them and sometimes filled them with meat, cheeses, eggs, and whatever else we could get our hands on. These are actually called klobasnek, but we just kind of lumped them into one thing. I personally love a kolache any way I can get my hands on. So keep an eye out as I will probably visit making these in a more traditional method.
What To Do About Dough
As I was doing my research in the wonderful world of kolaches many people simply tell you to use pizza dough. While using a ready made pizza dough makes life a little easier I do not think that it provides the sweet bread flavor of making the dough yourself. If you are set on using ready made dough I recommend Trader Joe’s, have have one of the best pre-made pizza doughs I have ever tried. If you plan on making your own kolache dough I have a very simple and easy dough that I made and it is fluffy and delicious. I would not recommend using anything like a puff pastry as that will expand to much in your oven and instead of nice little rolls you will get giant rolls with a lot of emptiness on the inside.
Variations On The Recipe
Kolaches made this way can be very versatile. This recipes calls for sausage and cheese. You can easily add eggs. You can use bacon instead or even ham. Same goes with the cheese. I used a white cheddar, you can use a yellow cheddar. You can use gouda, pepper jack, swiss, whatever you like. Just pay attention to the flavor profiles so that you do not combine anything that would not go that well together.
Sausage And Cheese Kolache

2 Tbsp Olive Oil
2 Tbsp Dried Sage
4 Garlic Cloves (grated)
4 Sausage Links (casings removed)
12 Oz Mild Cheddar Cheese (cut into ¼ inch cubes)
- Dough
2 ½ Cup Flour
2 Tbsp Honey
1 Tbsp Yeast
1 Cup Milk
3 Tbsp Unsalted Butter (room temperature)
Directions
- Dough
- In a small saucepan heat up your milk and honey to about 115 degrees Fahrenheit and remove from heat.
- Stir in the yeast until it has fully dissolved.
- Pour the milk mixture into a stand mixture and let sit for five minutes.
- Add in the flour and using the dough hook attachment start to knead at speed level 2 for about ten minutes adding the butter in after about three minutes.
- Once dough is done transfer to an oiled bowl, cover with plastic wrap and let rest in warm place for 1 hour.
- After an hour punch your dough done and transfer to a floured surface.
- Knead the dough for a minute or two then roll it into a log about 18 inches long.
- Slice it into sections roughly 2-inches wide then slice those in half.
- Shape those into little dough balls and cover with towel and let rise for another 45 minutes.
- Roll out the dough into 5 to 6-inch round sheets.
- Filling
- In a large skillet heat together oil, sage, and garlic over low heat for about 5 minutes.
- Add in the sausage and using a wooden spatula break apart and cook until browned.
- Place about 1/8 of a cup of sausage in the center of each dough sheet.
- Divide the cheese among each dough sheet.
- Using a little water wet the edges of your dough sheet and bring the edges of the sheet toward the center and pinch together sealing it shut.
- Place your dough balls on a parchment paper lined baking sheet and coat with the oil.
- Bake for about 15 minutes (rotating sheet halfway through) or until they get nice and golden browned.
