About This Recipe
This a combination of ingredients that I sure we all might have seen before. I myself am a huge fan of one of the most popular combinations, the caprese salad. Yes combining mozzarella and tomatoes has been around since the dawn of time. Salad, pizza, sandwiches, the list can probably go on, but I cannot think of anything else. I am always in the kitchen trying to think of new ideas with tomatoes and I thought why not make a pizza that is not really a pizza. The tomato can be its own crust and sauce, the basil and salt can add some flavor, then we top it off with mozzarella cheese and a pinch of parmesan cheese. It turned out wonderfully. I hope you all enjoy them as much as I do/did.

So while I was writing this post a thought occurred to me. What if you made some fried green tomatoes then topped them off with the basil, mozzarella, and parmesan? I have to try this myself. Sorry for the complete random input here, but the ideas sounded so good I felt I should share. I think I will have a new recipe coming soon…
Baked Mozzarella Tomatoes

1 16 oz Mozzarella Log (pre-sliced)
3 Tomatoes (1/4-inch slices)
½ Cup Fresh Basil
½ Grated Parmesan Asiago Cheese Blend
Olive Oil
Directions
- Preheat oven to 375 degrees Fahrenheit.
- Place your tomatoes on a parchment paper lined baking sheet.
- Divide the basil among your 8 tomatoes.
- Place one mozzarella slice on top of your basil.
- Drizzle some olive oil over the tomatoes and sprinkle with the Parmesan cheese blend.
- Bake for about 10 minutes or until cheese starts to melt.
- Transfer to a broiler and cook until the cheese browns.
