Bourbon Bacon Onion Dip

1 Medium Red Onion (diced)
8 Strips Thick Sliced Bacon
¼ Cup Bourbon Whiskey (divided)
1 Cup Sour Cream
2/3 Cup Cream Cheese
1 Tsp Garlic Powder
Salt & Pepper (to taste if needed)
Directions
- Cook your bacon until crispy; set aside and chop.
- Using the left-over bacon grease sauté your onions until soft and tender.
- Add in all but 1 Tbsp of your bourbon to the onions and continue to sauté until liquids have evaporated.
- Transfer onions to a bowl and place in the refrigerator to cool.
- In a medium size bowl combine the sour cream, cream cheese, and garlic, blend until smooth.
- Once onions are cooled add them to the sour cream mixture along with bacon and remaining Tbsp bourbon, mix until well combined.
