I love a good chicken thigh recipe. Especially if it has a lot of garlic and butter, how can you possibly go wrong? This chicken thigh recipe also fits very well into a keto diet as well as being gluten free so you get two other things wrapped into one delicious package.

While I enjoyed these chicken thighs thoroughly one of the things I will try a little different next time will be to cook down some of the excess juices from the onions. This will help caramelize them and help give your chicken thighs a little more crispness. If you wanted to make this a little healthier you can always swap out the chicken thighs for chicken breast or even use pork chops instead, so many wonderful choices we can make with this. And the last thing I am going to do next time I make these chicken thighs is sprinkle a parmesan cheese blend over the top.

Ingredients

  • 4 Chicken Thighs

  • 10 Garlic Cloves (peeled)

  • 1 Small White Onion (chopped)

  • ½ Cup Butter (melted)

  • 2 Tsp Fresh Thyme

  • 2 Tsp Fresh Rosemary

  • 2 Tsp Fresh Parsley

  • 1 Lemon

  • Salt & Pepper

Directions

  • Season your chicken thighs with salt and pepper.
  • In large skillet melt butter over medium-high heat
  • Add in the onions and sauté for about 5 minutes or until softened.
  • Add in the garlic, thyme, rosemary, and parsley and sauté for 5 minutes.
  • Place your chicken thighs in the skillet and cook for 5 minutes on each side basting every so often with the butter.
  • Once chicken is fully cooked squeeze lemon juice over the top and let rest for 5 minutes before serving.
