Looking to put a little more umph into this meal? Try adding in some shrimp or even crawfish to your dish. Scallops do taste great by themselves, but go great with other seafood. You can even throw in some grilled vegetables like squash, eggplant, and even some peppers. If you do want to add some extra spice factor I sometimes add a little hot sauce to the scallops while I frying up them up.

Cajun Scallops with Cajun Cream Sauce

Ingredients

  • Scallops
  • 1 Tbsp Olive Oil

  • 1 Large Red Onion (thinly sliced and separated into rings)

  • 1 Tsp Cajun Seasoning

  • 1/2 Tsp Pepper

  • 1 Tbsp Butter

  • 1 Garlic Clove (minced)

  • 3/4 Pound Fresh Scallops

  • Cajun Cream Sauce
  • 2 Medium Tomatoes (chopped)

  • 1/2 White Onion (diced)

  • 3 Garlic Cloves (minced)

  • 1/2 Cup Chicken Stock

  • 1/2 Cup Heavy Cream

  • 1/2 Cup Shredded Parmesan Cheese

  • 2 Oz Cream Cheese (cubed)

  • 1 Tbsp Cajun Seasoning

  • 1 Tbsp Cayenne Pepper

  • 1 Tbsp Olive Oil

  • Salt & Pepper (to taste)

Directions

  • Cajun Cream Sauce
  • In a saucepan heat the olive oil and sauté the onion until translucent. Add in the garlic and tomatoes, stir until the tomatoes start releasing their juices.
  • Add in the cayenne pepper, Cajun seasoning, and cream cheese. Stir until the cheese is melted and well combined with the tomato sauce mixture.
  • Add in the chicken stock, heavy cream, and parmesan cheese. Continue to stir until parmesan and has melted.
  • Pour the contents in a blender or food processor, pulse blend the sauce until smooth.
  • Pour back into the saucepan and heat until is thickened to your preferred consistency.
  • Cajun Scallops
  • Heat the olive oil in a cast iron skillet over high heat. Add onion Cajun seasoning, pepper and sauté for about three minutes.
  • Add in the butter and garlic; sauté for an additional 30 seconds.
  • Add in the scallops and cook for about 1 minute or until the scallops are browned on the bottom.
  • Sprinkle the scallops with hot sauce (if desired). Flip scallops over and cook until the desired doneness has been reached.
  • Combine the scallops with the cream sauce and enjoy.
