2 Pounds Cooked and Shredded Chicken Breast
1 Tbsp Coconut Oil or Olive Oil
2 Bell Peppers (seeded and sliced)
1 Large Onion (chopped)
4 Oz Hot & Sweet Jalapenos
8 oz Cream Cheese
1 Tbsp Taco Seasoning
2 cups Shredded Cheddar Cheese
2 Avocados
Directions
- Preheat oven to 375 degrees.
- Prepare a 9×13 inch casserole dish with cooking spray.
- In a large skillet over medium heat add the oil and swirl to coat.
- Add the onions and peppers to the skillet, cooking over medium-high heat and stirring occasionally until softened. Remove from heat.
- To the skillet add the chicken, cream cheese, taco seasoning, and one cup of shredded cheese.
- Transfer to casserole dish, and top with remaining cheese.
- Bake for 25-30 minutes or until the cheese is melted and bubbly.
- Serve topped with sliced avocado.
