I love a good vinaigrette, and what is even better is that they so easy make. Your basic ingredients to a vinaigrette are 3 parts oil and 1 part vinegar. Everything after that is just icing on the cake. You can add your favorite blend of seasonings, shallots, herbs, and even mustard. Combining this vinaigrette with the chicken and quinoa goes a long way in satisfying your hunger.
A Note on shredding your chicken
There are many ways that you can shred your chicken. I have used forks in the past, I have cut it with a knife, I have used the claws noted above. But the method I now use the most ,at least on chicken, is the hand mixer. I know that we have been seeing that in those kitchen hack videos, but I tried it and it actually works. I highly recommend that you try it yourself, just be careful it can send some chicken shreds flying.
Chicken Salad with Orange-Pistachio Vinaigrette

1 Cup Quinoa
4 Tbsp Olive Oil
2 Tbsp White Wine Vinegar
2 Tbsp Orange Juice
1 Tsp Salt
¼ Tsp Pepper
2 Cups Chicken Breast (cooked and shredded)
½ Cup Fresh Basil
¼ cup Unsalted Pistachios (chopped)
4 oz Mozzarella Cheese (bite size pieces)
2 Medium Heirloom Tomatoes (cut into wedges)
Directions
- Prepare quinoa per directions (I recommend using chicken broth, but water is fine).
- Combine oil, vinegar, orange juice, salt, and pepper in a medium bowl, stirring with a whisk.
- Add chicken, basil, pistachios, and cheese and toss to coat.
- Place quinoa on plate and put chicken mixture on top.
- Garnish with whole pistachios and tomato wedges.
