What is a quesadilla? Pure wonderfulness, that what it is! I mean for me sometimes the most simplest of things are great, and quesadillas are just that. They are a blank canvas for you to do with whatever you would like. Want to beef in it? Go ahead. Want to add chicken to it? Go for it. Want to throw in veggies? Throw you inhibitions out the window and go for it. In this recipe we are adding using chorizo and adding in some jalapenos to give it a little extra kick.

What To Serve With Your Chorizo Quesadilla

If you are going to stick with a traditional Mexican style meal you can easily team up you chorizo quesadilla with beans and rice. I love using refried beans. They are fast, convenient, and easy to make. One of my favorite ones comes from Trader Joe’s. It is their refried beans with jalapenos. When it comes to your rice choices you can make your own or use on of the many box mixes out there. While I prefer homemade my favorite box mix is from Rice A Roni. They have a Spanish rice and a Mexican style I highly recommend adding in the can of diced tomatoes to the Mexican Style as well.

Ingredients

  • 16 Oz Chorizo

  • 2 Tsp Chili Powder

  • 1 1/3 Cup Shredded Mexican Style Cheese

  • 1 Jar Hot & Sweet Jalapenos (do not worry, you will not be using them all)

  • 4 10 Inch Flour Tortillas

  • Pico De Gallo

  • Sour Cream

Directions

  • In large skillet over medium heat add in your chorizo and chili powder and cook until chorizo is browned.
  • Remove chorizo from heat and portion it out into 4 equal portions.
  • Using a griddle or another large skillet place your tortilla on it over a medium high heat.
  • Spread 1/3 cup of cheese over the tortilla and cook until the cheese starts to melt.
  • Once cheese starts to melt place some of your jalapenos over half (as many or as few as you would like).
  • Spread your chorizo on one half of your tortillas.
  • Now fold your tortilla in half and cook one each side for a minute each.
  • Serve with a side of pico de gallo or sour cream.
