I am a type of person that believes that some traditions should be upheld. I mean, if it is not broken, then why fix it. However, there are times when maybe pushing the boundaries are a good thing. The distilling of bourbon whiskey is one of those things. Traditionally distilleries use oak casks to age their bourbons, but Cleveland Whiskey has broken this tradition. They transfer their bourbon into casks made from different varieties of wood and use a process called “pressured aged” to produce unique bourbons.

I originally bought a bottle of their Sugar Maple Wood Bourbon for a recipe I was working on, and when I tried it later at dinner I instantly fell in love. The nose has a soft and sweet scent to it rather reminiscent of maple syrup. The palate feel was full bodied with all the wonderful notes of maple, vanilla, and even caramel rounding out with a nice sweet and smooth finish. This is why traditions are meant to be challenged every once in a while.

As time progresses, I am sure I will refine my ranking system, but for now I will give this a solid 4 out of 5. I honestly cannot wait to try their other products.
