Ingredients

  • 16 oz Chopped Spinach

  • 2 cups Heavy Cream

  • 3 Tbsp Soy Sauce

  • 2 Tsp Dijon Mustard

  • ½ Tsp Ground Nutmeg

  • ½ Lemon

  • 1 Tbsp Lemon Pepper

  • 1 pound Salmon (portioned into 4 oz pieces)

Directions

  • In medium pot combine cream, soy sauce, mustard, and nutmeg. Bring to a light boil and add spinach. Reduce heat and simmer until spinach is tender.
  • Sprinkle lemon pepper over salmon.
  • Cook Salmon in skillet over medium heat for about 4 minutes on each side or until desired doneness is reached.
  • Spread a layer of spinach mixture on plate and place salmon on top. Serve with lemon wedges for taste.
