About This Recipe

This recipe is a great one as it combines three wonderful seasonings that have completely different flavor profiles: garlic, honey, and Worcestershire sauce.

They are quite disjointed flavors, really. Separately, garlic is earthy and pungent, while honey is sweet and fruity, and Worcestershire sauce is sharp and salty. The vast majority of cooks around the world would likely agree that, together, these items aren’t too wonderful. This is a perfectly understandable train of thought – it is an odd combination. The trick, though, is to consider other seasoning blends that incorporate disjointed ingredients.

As I thought of this combination, I had a few ideas about cajun seasoning in my mind. Cajun spices are some of the most interesting, at least in my opinion, since they have a number of different places of origin. The historically Black communities that created those spice blends had influences from African ancestors, French colonists nearby them, and the unique farmlands where they could source their ingredients. This led to such blends as garlic granules (a classically French concept) and smoked paprika (a plant from Africa prepared in a new, American, way).

Another example of the unique spice blends of cajun food is Worcestershire sauce, tabasco sauce, and nutmeg. These three ingredients are utterly different in terms of their flavor profile, but, altogether, they’re united by their potent aromas and dominating flavors.

With both of those combinations and the one I’ve concocted for this recipe, I would argue that the through-line is the aroma. Garlic and paprika, for example, create a wonderful smell: earthy, rich, and spiced. Honey, browned garlic, and Worcestershire sauce does the same, leading to a sweet, earthy, and tangy combination that matches up with pork like nothing else I’ve ever tried to cook with.

The salty pork and the tangy seasoning blend create chops that will blow away even the most seasoned pork lover. It’s a uniquely brilliant combination, and we can’t stress enough how tasty it is.

If you were looking to add a little heat to the mix, we might suggest smoked paprika or cayenne pepper. Those options will add some heat while also maintaining the earthy notes of the garlic.

To make sure that you nail this recipe the first time you try it, take as much care as you can with the garlic.

Garlic is a uniquely interesting ingredient – the more finely you chop it, the more powerful the final flavor will be. To really get the best flavors for garlic sauteed at high heat, you want to finely mince, and cook while stirring rapidly. This will ensure all of the tiny, tiny pieces get cooked evenly, while also allowing for great flavor distribution.

Ingredients

  • 4 Pork Chops

  • 2 Tbsp Olive Oil

  • 6 Cloves Garlic (minced)

  • 1 Tbsp Butter

  • ¼ Cup Honey

  • ¼ Worcestershire Sauce

Directions

  • Season the pork chops with salt and pepper.
  • Heat the oil in a large cast iron skillet over medium heat until hot. Sear the pork chops on both sides until golden brown (about three minutes on each side). Place the pork chops on a plate and set aside.
  • Melt the butter in the same pan, scrapping up any brown bits from the pan. Saute the garlic until fragrant (about 30 seconds). Add the honey and the Worcestershire sauce stirring until the sauce thicken slightly.
  • Add the pork chops back in the pan, basting them generously with the sauce and cook for an additional 1-2 minutes, or until the edges are slightly charred.
