What can I say about this recipe? Inspired by both Irish and Italian influences, I just took three wonderful things whipped them together and voilà. You have a simple yet very tasty and fulfilling meal in one bowl. I hope you enjoy it as mush as I did.
Sausage, Pepper & Potato Bake

Ingredients
1 Large Red Pepper (chopped)
1 Large Orange Pepper (chopped)
1 Pound Precooked Italian Style Sausage (cut into 1-inch pieces)
1 Pint Cherry Tomatoes
½ Medium Yellow Onion (chopped)
2 Medium Russet Potatoes (Cut into small pieces)
3 Tbsp Olive Oil
1 Tsp Dried Oregano
1Tsp Dried Thyme
1 Tsp Dried Rosemary
1 Tsp Dried Parsley
1 Tsp Dried Basil
Salt (to taste)
Directions
- In a large bowl, combine the tomatoes, onion, peppers, potatoes, dried herbs, and olive oil. Toss together until everything is nicely combined.
- Transfer to a deep 9×13 inch baking pan. Bake for about 45 minutes at 375 degrees, or until the potatoes are almost done. Remove from oven.
- Sprinkle the precooked sausage over the top and continue to bake until the sausage is heated through and potatoes are fully cooked.
