A delicious infusion of peppers, tomatoes, potatoes, and herbs that should make your tastebuds dance with joy.

Ingredients

  • 1 Large Red Pepper (chopped)

  • 1 Large Orange Pepper (chopped)

  • 1 Pound Precooked Italian Style Sausage (cut into 1-inch pieces)

  • 1 Pint Cherry Tomatoes

  • ½ Medium Yellow Onion (chopped)

  • 2 Medium Russet Potatoes (Cut into small pieces)

  • 3 Tbsp Olive Oil

  • 1 Tsp Dried Oregano

  • 1Tsp Dried Thyme

  • 1 Tsp Dried Rosemary

  • 1 Tsp Dried Parsley

  • 1 Tsp Dried Basil

  • Salt (to taste)

Directions

  • In a large bowl, combine the tomatoes, onion, peppers, potatoes, dried herbs, and olive oil. Toss together until everything is nicely combined.
  • Transfer to a deep 9×13 inch baking pan. Bake for about 45 minutes at 375 degrees, or until the potatoes are almost done. Remove from oven.
  • Sprinkle the precooked sausage over the top and continue to bake until the sausage is heated through and potatoes are fully cooked.
