A Spicy Belly warming breakfast.

Ingredients

  • 9 Oz Chorizo

  • 1 Red Pepper (chopped)

  • 1 Jalapeno (diced)

  • 4 Green Onions (sliced, divided)

  • 6 Large Eggs (beaten)

  • 1 Cup Tortilla Chips (crushed)

  • 1 Cup Shredded Mexican Blend Cheese

  • 2 Avocados (pitted, peeled, sliced)

  • ½ Cup Sour Cream

Directions

  • In a large skillet over medium heat cook your chorizo until it starts to brown.
  • Add in your red pepper, jalapeno, and half of the green onions and continue to cook for about five minutes.
  • Mix in your eggs. Using a rubber spatula to stir and cook until the eggs just begin to set.
  • Add in the tortilla chips and half of the cheese and continue to cook until the eggs are fully set.
  • Divide the eggs among your plates and top with the avocado, green onions, sour cream, and cheese
