Ingredients
9 Oz Chorizo
1 Red Pepper (chopped)
1 Jalapeno (diced)
4 Green Onions (sliced, divided)
6 Large Eggs (beaten)
1 Cup Tortilla Chips (crushed)
1 Cup Shredded Mexican Blend Cheese
2 Avocados (pitted, peeled, sliced)
½ Cup Sour Cream
Directions
- In a large skillet over medium heat cook your chorizo until it starts to brown.
- Add in your red pepper, jalapeno, and half of the green onions and continue to cook for about five minutes.
- Mix in your eggs. Using a rubber spatula to stir and cook until the eggs just begin to set.
- Add in the tortilla chips and half of the cheese and continue to cook until the eggs are fully set.
- Divide the eggs among your plates and top with the avocado, green onions, sour cream, and cheese
