Stuffed French Toast With Lemon Curd

Ingredients

  • 8 Slices of Brioche Bread

  • 6 Eggs

  • 3 Tbsp Heavy Cream

  • 2 Tsp Vanilla Extract

  • 1 Tsp Cinnamon

  • Filling
  • 2 Oz Cream Cheese (room temperature)

  • 4 Tbsp Lemon Curd

Directions

  • In a small bowl cream together your cheese and lemon curd until smooth.
  • In a larger bowl whisk together your eggs, cream, vanilla, and cinnamon.
  • Taking one slice of bread, spread about a Tbsp or so over the top of it.
  • Taking another slice of bread press the two firmly together to form a little sandwich.
  • Carefully dip your bread into the egg mixture making sure you cover it thoroughly and giving it time to soak up some of the egg mixture.
  • In a large pan melt 2 Tbsp of butter over medium heat and place your bread onto the pan and cook for about 3 to 4 minutes per side.
  • You can serve with whipped cream on top, lemon curd, or a nice mascarpone cheese spread.
