Stuffed French Toast With Lemon Curd

8 Slices of Brioche Bread
6 Eggs
3 Tbsp Heavy Cream
2 Tsp Vanilla Extract
1 Tsp Cinnamon
- Filling
2 Oz Cream Cheese (room temperature)
4 Tbsp Lemon Curd
Directions
- In a small bowl cream together your cheese and lemon curd until smooth.
- In a larger bowl whisk together your eggs, cream, vanilla, and cinnamon.
- Taking one slice of bread, spread about a Tbsp or so over the top of it.
- Taking another slice of bread press the two firmly together to form a little sandwich.
- Carefully dip your bread into the egg mixture making sure you cover it thoroughly and giving it time to soak up some of the egg mixture.
- In a large pan melt 2 Tbsp of butter over medium heat and place your bread onto the pan and cook for about 3 to 4 minutes per side.
- You can serve with whipped cream on top, lemon curd, or a nice mascarpone cheese spread.
